From down under!

Wow, i'm so stirred and encouraged to see so many of you guys cultivating all the skills since we went abroad. Nevertheless, here's some attempts i took when i went over to Adelaide in 2 weeks ago.
Ricotta Cheese Pancake - made by me & Su Chuen. Recipe, er, gotta ask chuen. basically you need some flour, ricotta cheese of course, egg white first, then add the yoke, erm.. what else.. the finishing and deco - berries, butter, er maple syrup if you somehow find a bottle in your cupboard, & yogurt. Yum!

OKOK. this is brocolli salad! i know this. basically you need brocolli, nuts, bacons & mayo. Cooking instructions:-
1. Wash your brocolli until super clean. Coz in this recipe, we are not cooking the brocolli. trust me, it's nice. & of course, cut it mouth size...
2. mix mayo into the brocolli... not too much, not so wet le k..
3. open assorted nuts package - almonds, what else ar.. oh yah.. RAISINS AS WELL.. and then mix with the salad
4. lastly, while doing all these, make sure u cook your diced bacons (can be in mircowaves - depending on ur microwave strength - 5-7mins til its dried and hard so that it is crispy)
5. mix it all together and its ready to serve your appetite! how easy right?
Lasagna!
Ingredients - lasagna sheet, lotsa shreded cheese, lasagna sauce/pasta sauce, flour, butter, milk, salt, pepper, herbs to your liking... erm.. what else.. mince meat - beef, chicken, pork

1. fried garlic & onions together with meat, then add pasta sauce, pepper & salt & herbs.. once ready, set it aside.
2. Start feeding the sauce on your baking tray, & layer it with the sheet. repeat this process until 80% of the tray height. (leave some space for the topping)
3. Make the cream sauce.. First melt butter on low fire, and then add some flour and stir it until the flour sorta merge with the butter. then add milk and keep stirring.. then add cheese and stir stir stir at low fire.. the whole process is to make sure the sauce is equally blend and thickened. it requires some muscle to make sure it thickens.. so KEEP STIRRING..
4. once its thicken, pour the cream sauce over the lasagna, and then add heaps of cheese on top.
5. place it in oven or convection microwave at 180deg for 40 mins/until cheese brown.

hehehe.. miss u guys.. cant wait to hang out and makan again end of this year!

Fairycakes..

The vanilla cupcakes
With frosting and sugarsticks as deco

I came across a recipe recently and decided to try it out yesterday.. This time I tried baking, Vanilla Cupcakes or as they call it Fairycakes!
It was a quite successful.. though I've put in more butter than recommended for both the cupcake and icing. The cupcake turn out just nice for me, as I love butter, but the icing didn't frost well. Didn't buy an icing set as well.. so I came up with a 'durian like' (as Kenn calls it) with colourful sugar sticks as decorations instead ;p

Method:
Preheat oven to 177 degrees C and line 12 muffin cups with paper liners.

For the Cupcakes:
Cream 113 grams of unsalted butterand 130 grams of granulated white sugar until light and fluffy.
Add 3 eggs, one at a time, beating well after each addition.
Beat in 1 teaspoon of vanilla extract.
In a separate bowl whisk together 210g of flour, 1 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt.
With the mixer on low speed, alternately add the flour mixture, butter mixture and 60ml of milk, in three additions, beginning and ending with the flour.

Evenly fill the muffin cups with the batter.
Bake until nicely browned and let it cool.
Then frost with icing.

For the Frosting:
Cream 113 grams of butter until smooth and well blended.
Add 1 teaspoon of vanilla extract.
And with the mixer on low speed, gradually beat in 230 gramsof icing sugar.
Add 2 tablespoon of milk and beat on high speed until frosting is light and fluffy.
